A traditional Greek walnut cake
- 1 lb. unsalted sweet butter
- 1½ cups sugar
- 10 eggs
- 1 teaspoon orange zest
- 2 cups flour
- 4 teaspoons baking powder
- 1 teaspoon cinnamon (ground)
- ½ teaspoon cloves (ground)
- 2½ cups chopped walnuts (or pecans)
Cream butter until white; add sugar and beat until dissolved; add the eggs one at a time and continue beating; add orange zest. In a separate bowl thoroughly combine remaining ingredients, then add to butter mixture and blend well. Pour into buttered 17x11½ pan and bake at 350° for 40-45 minutes. Remove from oven and allow to cool. Cut into squares and pour on the hot syrup (see below).
- 4 cups sugar
- 3 cups water
- ½ lemon squeezed
- ½ teaspoon vanilla
- 1 cinnamon stick (optional)
- ½ teaspoon whole cloves (optional)
Combine all ingredients in a medium saucepan and bring to a boil. Reduce heat and simmer for 10 minutes. Remove cinnamon stick/cloves and pour over cool Karidopita. Enjoy!
